What I'm Loving Wednesday

Happy Wednesday everyone!
I realized it's been awhile since I've done a "What I'm Loving Wednesday" post, so that's what's happening today! Being a compulsive list maker, these are actually my favorite types of posts to write, plus it's fun to share some of the little things that are currently making me happy. Here's the (super) random list of what I'm loving right now: 
 Cadbury Eggs
Basically my favorite candy ever. But they're in my face every time I go in the grocery store, impossible to resist...good thing Easter only comes once a year! 
Duck Dynasty
I straight up love this show, and find it super addicting. I realize it's ridiculous and scripted, but as far as reality TV families go the Robertsons seem like they have good values. Plus, they're just hilarious, especially Uncle Si! I've been watching it quite a bit lately and I'm looking forward to the premiere of season 3 tonight on A&E.
 Essie Nail Polish

 I love painting my nails and I recently added a few spring-y polishes to my collection. Essie has the best colors and I'm loving all the new ones I picked out--Lilacism (a pretty pale lilac), Chinchilly (the perfect gray), Mod Square (barbie-esque pink) and Turquoise and Caicos (minty aqua). But I'm always on the hunt for new colors, so tell me, what are some of your favorites? What nail colors are going to be "in" for spring?

 My Kindle
Cam got me the Kindle Paperwhite for Christmas, and I'm absolutely loving it. The e-ink screen is easy on the eyes, but the backlight also makes it perfect for reading in bed. I'll have some book reviews coming soon! (I also love cinnamon bears, but that's beside the point)
 Sumo Citrus
Have you seen these crazy things? They're these giant, funky-shaped oranges with wrinkly peels and they are delicious! They're easy to peel, seedless, and so yummy!
MAKERS: Women Who Make America 
Last night, this documentary premiered on PBS that covered that the strides made for women's rights over the past decades. I watched the second half of it and I felt like I was right back in one of my Communications Studies classes in college! (nerd alert) Narrated by Meryl Streep, it covered a wide range of different issues that have faced women and the progress that's been made is inspiring! It's available to watch here, so definitely check it out!
I know we're getting ready to take a vacation next week, but the traveler in me is always thinking about our next trip. Thailand has been really high on my list of places to visit for awhile now, but after this week's episode of the Bachelor I'm pretty sure it's #1. Beyond the drama, the roses, and staged romance, my favorite part of the Bachelor is always the gorgeous places they travel to. Yes I realize they're always doing extreme things like helicopter rides and swimming through caves, but the natural beauty of a place like Thailand can't be denied, and I'd so love to visit soon! And when we do, I so want to go to an island and feed monkeys like Lindsey and Sean did--how cool was that?!
(And yes, I do watch both the Bachelor and feminist documentaries on PBS...I'm an enigma wrapped in a riddle)
 Ghirardelli Sea Salt Chocolate
I am obsessed with this stuff, it's delicious. It's the perfect combination of sweet and salty with some crunch from the almonds, and plus it's dark chocolate so it's good for you right? (That's what I tell myself) Next time we're in San Francisco (which will hopefully be soon!), I plan to buy a bulk bag of these squares at the Ghirardelli store...because hopefully if they're individually wrapped that will help me eat them at a more reasonable pace. Ha.
Jennifer Lawrence
Thanks to Sunday's Oscars, the nation is currently having a full-on JLaw lovefest this week and I couldn't be more excited because I think she's amazing. My Facebook newsfeed has been blowing up with people sharing hilariously candid clips of her from the Oscars, and this article perfectly sums up why we're all so obsessed with her. This clip is my favorite:
So great. 
Seriously, if I'm having a bad day I'm just going to google GIFs/YouTube clips of Jennifer Lawrence. Because that's not weird or anything.

The Bachelorette!

Did everyone watch last night?!

You know I was on the couch in front of the TV, glass of wine in hand, to watch the season premiere of the Bachelorette!

The Bachelor/Bachelorette is one of my favorite shows, and I was really looking forward to this season after Ben's season, which was kind of a dud. I actually didn't watch Brad's season, so I didn't see Emily Maynard when she was on the Bachelor previously, it was one of the few season's I missed. However, I'm really pumped for this season, it looks like it's going to be exciting! Emily seems like such a sweetheart and I love that she's a Southern belle. All the guys last night kept going on about how amazing she looked and it's definitely true, girl is gorgeous! She seems very genuine and you can tell that she loves her daughter. I think the fact that they're filming this season in Charlotte will make things interesting, and I'm looking forward to watching all the drama unfold.

Ahh Chris Harrison, I think that you should be the next Bachelor...
Last night's premiere was the typical thing, lots of awkward entrances. I don't know why people always think they need to do these stupid thing to make an impression, but I guess if everyone just introduced themselves it might get a little boring. Granted it's always hard to tell from the first episode who the standouts will be, but just based on what I saw last night my favorite guy so far is...

Ryan! He's from from the South, former at NFL player, works with kids, and I think that him and Emily would be really adorable together. He didn't get too much screen time last night, but I'm sure we'll be seeing more of him!

No TV Monday

Well folks, another weekend on the books, another week fresh with possibility is just beginning. How was your weekend?

Ours wasn't super eventful, but it flew by just the same. Friday night, we headed down to Reno to stay with our friend Aaron in preparation for Cam's exam on Saturday at the Reno-Sparks Convention Center. He had to be at his exam at 7:15am on Saturday morning, and since the convention center is about 90 minutes from our house, it made sense for us to stay down in Reno the night before. His exam took the entire day, which meant I had lots of time to drive around Reno and have a day to myself. I'll admit, my first impressions of Reno from when we moved here were not the best. Honestly, I thought it was just a crappy city and I didn't anticipate spending much time there. However, after this weekend I was pleasantly surprised. As far as cities go, they have all the normal suburban conveniences you could want, there are some really interesting local restaurants, and beautiful views of the mountains. There are some really nice neighborhoods and the cost of living is really low. On Saturday, I was able to do some shopping at Whole Foods (I've missed that place!), I took a Zumba class, had lunch a great local place, got some frozen yogurt (so good!), and went shopping at the outlet malls. Simple pleasures, but oh so enjoyable. I'm actually excited spend some more time in Reno in the future, and hopefully I'll do an more in-depth post!

Saturday night after Cam's exam, we went out for dinner with our friend Aaron at an all-you-can-eat sushi restaurant and it was AWESOME. We definitely took advantage of the all you can eat deal and ordered a ton of different rolls between the three of us, and finished them all. I am literally still full two days later. Let's just say between all-you-can eat-sushi and self-serve fro-yo, Saturday was definitely a day off from the Paleo diet! I didn't take any photos this weekend, and it was really nice to just unplug a little bit. I love taking photos, but sometimes it can get to the point where it feels like an obligation, and that's not fun so sometimes it's nice to just put down the camera/cell phone.

Speaking of unplugging, Cam and I have decided we're going to try something new at our house...No TV Mondays!


Sometimes, I feel like we have the TV on in the background constantly, and it can get tough to turn it off. For instance, we'll watch something on Food Network liked Chopped (love that show!), and as soon as it's over another episode will come on, and we'll get sucked in. It's just a vicious cycle of wasted time and us staying up later than we should at night. So in order to get our week off to a good start, we've decided that Monday is going to be our no-TV night, which means no TV at all the entire evening. We tried it for the first time last week and it was great; peace and quiet, we both did some reading, and we actually got in bed at a reasonable time. We want to make it a regular thing and I'm really excited about it actually.

Often I feel like I'm kind of tired coming in to the week after having a busy weekend, and then my work week starts off with a lack of focus and isn't as productive as it should be. Then by Friday, I'm running around like a chicken with my head cut off trying to wrap things up for work, and I go in to the weekend totally drained. And then the cycle just repeats itself. I'm hoping that starting our week with a nice quiet Monday where I get a good night of sleep will be a way to just improve the week overall. I'll let you know how it goes!

Finally, so this isn't a totally picture-less post, I'll leave you with a few photos from our day of skiing yesterday. Although I never used my camera this weekend, we did get a few pictures taken while we were skiing at Heavenly because the weather was completely gorgeous. The sky and the lake were so blue. I have to laugh at these photos because the photographer had us positioned on the hill so that Cam looks like a midget!

We had such a great day skiing, even if the snow was a little slushy because it was so warm! I'm still not a great skier but I feel like I've improved so much since the beginning of the season. And as much as I complain about certain aspects of living here in Tahoe, when the sun is shining and I'm on the chair lift looking at the lake and the mountains, and I realize that I'm not on vacation but this is where I actually live now, I kind of love it.

My parents are coming in to town on Friday for a visit, and so I'm hoping that the next few days fly by because I'm really looking forward to spending some time with them and showing them Tahoe!

Love me some Downton Abbey

Have y'all been watching Downton Abbey? If you're should be!

Season Two just concluded last Sunday on PBS, but if you haven't been watching you still have time to catch up. Season One is available for streaming on Netflix, and Cam and I first watched it back when we were living in Colorado and got hooked after one episode. (Yes, Cam loves this show's that good!) Season Two premiered here in the US last month and is available online at, but according to the website it's only available for streaming there for a few more days! However, since the show came out months ago in the UK I'm pretty sure you may also be able to purchase Seasons 1 & 2 online from Itunes.

What's so great about Downton Abbey you ask?

Um, everything.

It takes place in England during the early 20th century, and centers around a wealthy family (who lives in Downton Abbey...hence the name) and their many servants. I love history and this takes place during such a fascinating time. I love all the period details of the show (even if they aren't all completely correct) and the house is amazingly gorgeous. Everything is so formal and there is such distinction between classes, it's so totally different from life today. Each episode is full of drama, romance, scandal, and some humor...mainly thanks to the Dowager Countess of Grantham, played fabulously by Maggie Smith.

She's so snarky and I love it.

I also love all the gorgeous gowns that the Crawley women are always wearing in this series, it makes me wish that people still dressed this way...and wore hats.

The show is so well-cast and all the different storylines between the characters are so intriguing!

Long story short? If you haven't watched Downtown Abbey, you need to see what all the buzz is about! It's definitely one of the most entertaining, well-written shows on television.

(Also, if you're a Downton fan you'll definitely enjoy this humor from one of my favorite hilarious)

Cam and I have two more episodes to watch from Season Two and I have a feeling we'll get through them both tonight...I can't wait! Have a great Tuesday! xoxo

Superbowl Eats & Monday Night TV

I hope you're hungry because I've got not one but two yummy recipes for you today!

  First things first, Super Bowl Sunday I served my favorite appetizer...but I only make it once a year because it's that unhealthy delicious. Buffalo Chicken Dip. This stuff tastes just like delicious buffalo wings and blue cheese all baked together and gooey. It's something that one of my best friend's mom used to make for sleepovers when we were in high school, and luckily she was kind enough to give me the recipe (multiple times, since I've written it down and then lost it a few times!). It's super tasty and totally worth every calorie...because trust me there are a lot of them!

Buffalo Chicken Dip
 2 large cans of chicken
1/2-1 cup of Frank's Red Hot Sauce 
(depending on how spicy you want it!)
2 bricks of cream cheese
1 cup of chunky blue cheese dressing 
(you can substitue ranch if you're not a blue cheese fan!)
1 1/2 cups shredded cheddar cheese

 Drain chicken and place in a large skillet. Saute the chicken in the Frank's Red Hot Sauce until it's completely coated. Add 2 bricks of cream cheese to the skillet and stir until melted. Add 1 cup of the shredded cheddar cheese to the skillet and stir until melted. Add in the blue cheese dressing and stir until melted. Pour into a casserole dish, sprinkle top with remaining cheddar cheese, and bake at 350 degrees for 20-30 minutes until cheese is browned and bubbly. Serve with crackers or tortilla chips.
(I love those Tostitos Scoops for this dip!)

Another thing that I made Sunday was a Super Bowl staple--chili and corn bread! Chili is something I make in the crock pot quite often, but I'm always tinkering with the recipe. I know everyone likes their chili a little bit different, but I prefer mine thicker and chunkier over soupier and I like a lot of different types of beans. For the batch I made Sunday, I pretty much combined elements from a few different slow-cooker recipes I found on and then added a few secret ingredients of my own.

Jane's Four Bean Chili
1 lb ground beef
1 yellow onion, chopped
1 15oz can of tomato sauce
2 14.5oz cans of diced tomatoes
4 15oz cans of beans, drained
(I used black beans, kidney beans, pinto beans, and great white northern beans)
1 tbs ketchup
1 tbs Frank's Red Hot Sauce
1/2 cup chicken broth
1 tbs chili powder
1 tsp cumin
1/2 tsp oregano
1/4 ancho chili powder
Salt and pepper to taste

Brown ground beef in a skillet until all pink is gone. Add to crock pot. Dump all the other ingredients in the crock pot. Stir. Let cook on low for 8-10 hours.

Easy peasy!

 As far as cornbread, I just made classic Jiffy cornbread because a) it's made in Michigan and b) it's the best. And then as far as other Superbowl eats, I also made this simple yet delicious good! (I only took one picture of my guac because Jenna's got beautiful pics on ELR!)

 So that's what we snacked on during the Super Bowl, what about you? I'd love to get some new recipe ideas for next year!

After this weekend, I was ready to just chill out last night. Cam and I had leftover chili for dinner and watched some quality TV...and by that I mean the Bachelor. (Yes, I actually suckered Cam in to watching it with me!) I really like Kacie B. and Nicki, where as Cam said he should choose Emily or Lindzi (and honestly, I like both of them too). We both agree that Courtney is awful and honestly, some of the things she says sound scripted. I hope she doesn't win, but she probably will. Grrrr.

After The Bachelor, I watched the premiere of that new show Smash on NBC and I really enjoyed it! I liked the songs and I'm interested to see what happens. I think that Katherine McPhee is really beautiful and talented, and I like Debra Messing and Anjelica Huston as well.

What I'm Loving Wednesday

Happy Wednesday everyone, I feel like this week is flying by!  Now that Halloween is over, my efforts to start getting in the holiday spirit were enhanced by the 6 inches of snow we got last night! Seriously, it's like deja vu from last week. I have a feeling that it's going to be a crazy winter ahead, but for now I want to take a minute to focus on the things that are making me happy today!

I got my first red cup at Starbucks this morning, yay!! Every year these make me so happy, and as silly as it sounds it really makes it feel like Christmastime. I love how something so simple can make a skinny latte that much more special.

As much as it's annoying to drive in the snow, it does make everything look pretty and makes rocking out to my Christmas Pandora station at work seem much more appropriate.

I'm also super excited that my post about my homemade Halloween Oreos was chosen to be on foodgawker today! Go check it out :)

I am looking forward to having dinner with one of my best friends tomorrow night! My good friend Ryanne goes to grad school at ASU for opera performance and her choir is out in Colorado this week, so I'm really looking forward to meeting up with her since I haven't seen her since Christmas!

Speaking of friends, this weekend two of my husband's best friends from college are coming to visit from Michigan and I'm really excited! It's funny, I was actually friends with both Neil and Jeff before Cam and I started dating because they both lived in my dorm freshman year. They were also both in Cam's fraternity and so after we started dating, I spent even more time with them and I consider them both my friends too. I'm hoping that the weather will be nice so we can show them a good time in Colorado!

Has anyone watched this new show on ABC called Once Upon a Time? I just watched the first two episodes on Hulu this week and I actually really love it so far! It's from the creators of Lost (a show I never really got into but I know it had all these complex plot twists) and it's about fairy tale characters that have been sent to live in our world and they don't remember who they are. I know, it sounds kind of hokey but the first two episodes were actually really good and I'm excited to see what happens.

Speaking of TV, another show that I'm really enjoying this season is Happy Endings and it's also on ABC. It's a sitcom that's set in Chicago and it follows six 20-something friends and I just love all the great pop culture references. It's in its second season and I feel like it's a lot funnier this year so if you've never seen it, definitely check it out.

And as always, I'm loving my sweet husband and my crazy dog. (This is an old picture, but it still makes me laugh every time I see it)
