Crock Pot Recipe Link-Up: Roast Chicken

Happy Sunday everyone! 

It's time for our second installment of the Crock-Pot Recipe Exchange and I'm so excited to be co-hosting this fun link-up with Jessica from Dreaming of Dimples and Andrea from left brain, right brain, pug brain. In my opinion, there is no more convenient way to cook a delicious meal during these fall months than using your slow cooker. The purpose of this link-up is to share some of the dishes we love, discover new recipe ideas, and hopefully find some new bloggers in the proccess!

Last month, I shared a recipe for beef tacos (which I need to make again soon because they were delish!) but this month I wanted to share another favorite recipe of mine--crock pot roast chicken! 

This is, without a doubt, the EASIEST way to cook a whole chicken and it's super delicious.



I've actually talked about the recipe here on the blog before, however, Cam and I love it so much that I figured it was worth sharing again. I discovered it on Allrecipes a few years ago and it's honestly the most simple dish you can make...let me show you:

Ingredients


1 (2-3lb) whole chicken
(if it's a little bigger it's fine, just so long as it fits in your crock pot!)
1 tsp paprika
Salt and pepper to taste

Directions


1.Wad three pieces of aluminum foil into 3 to 4 inch balls, and place them in the bottom of the slow cooker.

{I like smoked paprkia personally}
2.Rinse the chicken, inside and out, under cold running water. Pat dry with paper towels. Season the chicken with the salt, pepper and paprika, and place in the slow cooker on top of the crumpled aluminum foil.


3.Set the slow cooker to High for 1 hour, then turn down to Low for about 8 to 10 hours, or until the chicken is no longer pink and the juices run clear.

While the chicken might not have the crispy skin of roast chicken from the oven, the paprkia on the skin helps give it nice color and flavor. One the chicken is done, it's extremely moist and just falls off the bone.


Paired with veggies it makes the perfect dinner and the best part is that it provides a lot of leftovers. If you haven't tried this method, it might seem weird not to put any liquid in the crock-pot. However, if you just give it a try you will not be disappointed, it's that good!

  3. I'm veg but my husband LOVES chicken. He's been working long hours lately, so perhaps I'll do this for him on a Monday and he'll have chicken for lunches and late dinners all week!
