Cookies and Cream Ice Cream

Happy Tuesday everyone!

First of all, I have to say how pleased I am with my pretty new blog design courtesy of my sweet friend Lara over at Simply Irresistible. She did such a great job making my vision a reality, despite the fact that I am the most indecisive person ever when it comes to design. I love the finished product and I can't thank her enough! I'm feeling a little out of sorts this week (hence the lack of a post yesterday). We didn't get home from camping until late on Sunday night, and so the house is a little bit of a disaster from trying to get all our camping stuff put away. Yesterday was consumed by trying to get caught up with work, going to the gym, and grocery shopping as we had no food in the house when we got home. And then this Friday we leave for NYC, so I'm trying my best to get caught up with work, get packed, and return the house to some semblance of order before we leave! Never a dull moment around here, but I'm not complaining! I love our crazy life :)

 So despite the fact that this week is a little hectic, the sun is shining here in Tahoe and so I'm really just trying to slow down and enjoy it. There is definitely a chill in the air at night/in the mornings that tells me fall will be here soon, and I want to soak up every last drop of summer I can before it's gone. What better way to do that than with a bowl of homemade ice cream?!


I made this ice cream earlier this month, and it turned out so well. This recipe is super simple and I love all things Oreo, and there's something about August just calls for cookies and cream ice cream, doesn't it? Plus there's just something about homemade ice cream that's infinitely better than store bought, it's definitely one of life's simple yet sweet pleasures. And while I realize that ice cream isn't exactly healthy (and it's definitely not Paleo), at least if I make my own I know exactly what goes in it and it's not filled with chemicals/preservatives...so that counts for something, right?! Right. Any excuse for a bowl of ice cream :)
 
 
Cookies and Cream Ice Cream 
Recipe from: Sweet Tooth

I spy Cameron washing dishes...what a good husband...that's why I make him ice cream, ha :)
Ingredients
 
1-1/2 cups whole milk
1-1/8 cups sugar
3 cups heavy cream
1 tbsp vanilla
(I thought that the vanilla flavor was a little bit overpowering for cookies and cream ice cream, so next time I'd probably use 1/2 tbsp)
15 Oreos crushed
(feel free to use a couple more...I did!)

Directions


Make sure your ice cream maker is in the freezer for at least 24 hours before starting this recipe. (Sidenote: I use the ice cream maker attachment for my KitchenAid mixer, and I absolutely love it! It's just a double-walled bowl with a paddle attachment that you keep in the freezer, and it's so nice to not have own another kitchen appliance but rather utilize one we already have. If you have a KitchenAid stand mixer and are thinking about buying an ice cream maker, I'd highly recommend it!)


Stir the milk and sugar together in a medium-sized bowl until the sugar is dissolved, about 3 minutes. (I just used the regular bowl/paddle attachment for my KitchenAid for this part of the recipe!)


Mix in the cream and vanilla.


 Pour the mixture into the ice cream machine and let it run for the manufacturer's recommended time. (About 25 minutes or so)


While the ice cream is going, crush up the Oreos. (I use a Ziploc and a rolling pin, and make sure you have a variety of different sized pieces!)


Add the Oreos in about 3 minutes before the time is up.


 Put the ice cream in the freezer to firm up completely.


Serve and enjoy! 

Do yourself a favor and make a batch of this ice cream to celebrate the end of summer...you/your family will thank me :)

Speaking of ice cream (awkward segway), last week I had the pleasure of going to a little ice cream social get together for the Reno Alpha Phi Alumnae Chapter! I was an Alpha Phi at the University of Michigan, and somehow through this crazy blogging world I came across Katie's cute blog Bees & Bows and I noticed she was in Reno. She ended up seeing on my blog that I was an Alpha Phi and reached out to me asking if I'd be interested in attending any of their Alumnae events, and I was like heck yes, I work from home all day like a lonely hermit  said sure! Last week's ice cream social was held at a fro-yo place in Reno (and you know I'm all about any reason to get fro-yo!) and it was really cool to be able to meet women of all ages from all different schools who were all Alpha Phis. I really enjoyed it and will hopefully be able to participate in some of the other events they have coming up!

  1. This ice cream looks delicious... I'm such a huge sucker for oreos in any size, shape, or form, ha! Now I just need an electric mixer (can you believe I'm currently only using a hand one!?)... makes South Africa seem very third world ;)

    Glad you got to meet up for a sorority alumni event... looks like a blast!
