My Happy Marriage Chicken

How do I love thee trusty crockpot? Let me count the ways...
Hi everyone, it's almost time for another weekend...yay! It is sweltering hot here in Greenville right now, ugh. High 90's and humid is not super condusive for doing my besides laying on the couch and eating ice cream, but I'm trying to make the best of it. Today, I'm rocking my summer side braid, which is my go to hairstyle in this type of weather aka let me try to be try to look trendy when really it's just way to hot to blow dry my hair :)

So in honor this oppressive heat, I wanted to talk about the yummy dinner we had last night, because it's very low-effort aka no slaving over a hot stove, which is the last thing anyone wants to be doing in the summer!  You may have heard about Glamour Magazine's famous "Engagement Chicken", which is the recipe that supposedly if you make it for your boyfriend, he'll propse soon after. I've never tried that particular recipe, but the whole idea is that a way to a man's heart is through his stomach, and if you let a guy know you can cook, you suddenly become that much more attractive. (I would definitely say this is true in my experience, except for me it wouldn't be a chicken, I think that I hooked Cameron with my chocolate chip cookies!) There is just something about a delicious roast chicken that men seem to love, and that doesn't stop after you get married. That's why I love this recipe from Allrecipes which I have decided I'm going to rename it the Happy Marriage Chicken, because it's the kind of thing you can make to remind your hubby why he's so glad to have you as a wife!

This is a meal that you could make this for your parents, your boyfriend, your grandma, your friends, really anyone that you want to impress with a great dinner! (Actually I may have already done a post about this chicken, I can't remember, but that's how obsessed I am with this recipe. ) And the best thing of all about this Happy Marriage Chicken is that it's ridiculously easy. All you do is wash off the chicken, crumple up enough alumminum foil to cover the bottom of your slow cooker, season the chicken up a little bit, and then turn on your slow cooker. That's it. In 8 to 10 hours you're have a moist golden brown chicken that literally falls off the bone. I know I've said this before, but the slow cooker is so great to use all year round, not just for the winter time. So for weeks in the South when it's too hot even to BBQ, a quick and delicious slow cooker dinner like this one is the perfect solution. Hope y'all enjoy it as much as we do!

(Another great summer benefit of this dinner is you get two meals in one because if you're just cooking for two, you'll have enough chicken to use for another dish. Tonight we're having green salads topped w/ chicken breast, another perfect hot weather meal!)

Here's a picture of yesterday's chicken, all spiced up, sitting on the foil, and ready to be cooked...I wanted to take a picture of the finished product, but Cam had already started cutting it up by the time I got home...it's really that good.

  3. You are seriously amazing with that crockpot... we got ours for our wedding almost two years ago... and IT IS STILL IN THE BOX!!! I need to get it out and start listening to your advice :) I just found your blog, and love it!
